An evening with friends on Cupid’s Cay Eleuthera

One of the great pleasures in life is spending an evening eating and drinking with friends – especially when it is spent with Dan and Larry on Cupid’s Cay in Eleuthera.

They are among the finest hosts I know and a good time is always guaranteed when you are in their company.

They have a charming cottage on the Cay that they have renovated and extended and it is the place to go to watch the sunset with a cold drink in your hand…..

Firstly we were treated to a viewing of the new chicken coop they have just made – they watched over the hatching out of 2 chicks from eggs abandoned by their mother – sob sob ! – and now they are living the life of luxury in their new condo – sorry coop !

Drinks were served – and being the cheap date I am it was ice cold Kalik with a fabulously chilled glass for me.

Dan is a very keen and skilled cook and he loves to experiment with new dishes.

These were SO good !

This particular night it was started off with absolutely delicious little open pies – using won-ton wrappers as the shell and filled with basil, cheese , peppers and some of Dan’s magic !  We ate this sitting on the back porch – watching the sun go down and listening to the roosters getting sorted out in their perches up in the trees….

The main course we ate sitting down at the table inside. Quinoa pilaf – made with chick peas and chopped dried apricots – what a great taste ….. along with grilled mahi mahi -locally caught of course ,salad , and Dan’s version of conch fritters – quite the best I have ever eaten !

Desert was grilled pineapple – Eleutheran of course – served with homemade chocolate brownies and ice-cream.  Of course I ate too much – as always – but it was a really delicious meal. Great company, great music and a final check on the chicks as we were leaving.

Recognizing and appreciating the company of good friends is one of life’s great gifts – and opening up your home to welcome friends in is always a blessing to be cherished….
